Tex-Mex Breakfast Scramble [Vegetarian]

Hi guys! Today I decided to make a mexican style breakfast scramble because I had some cilantro and black beans that needed to be used, and also because everyone loves mexican. Here it is!

Ingredients:

  1. eggs or egg whites
  2. sour cream (optional if you are doing paleo)
  3. black beans
  4. cilantro
  5. bell peppers
  6. onion/shallot
  7. tomato
  8. peppers in adobo sauce
This is super simple and the thing is, eggs are so versatile. They taste like nothing so you can make them taste however you want! You like mexican food? Put mexican style stuff in them. You like thai or indian food? Think of what you like about that type of cuisine and put it in your eggs. They are the perfect base. 


I fried these beans up in a skillet but you can also put them in a sauce pan.....It doesn't matter now that I think about it!


Mix em up. 


Preheat another skillet for the eggs--medium/medium low heat.


Cut up your bell pepper, onion, cilantro, and tomato. 


I used egg whites here and then added sour cream. It gives a different awesome flavor. 


They don't mix very well and its gonna look kind of nasty but its good, I promise!


Put some oil in that skillet.  Let it warm up. 


Take your adobo pepper, mince it up, put it in a small cup and then add some of the adobo paste that was in the can with the peppers. 


Add some lemon juice--citric acid cuts the heat so its not too hot. 


Put your eggs in the skillet, and when they start to cook add the beans....


and veggies!


SCRAMBLE


Now take that adobo/lemon juice paste and add a little bit of sour cream. Put it in the egg mixture and scramble again. 


Delicious! You can serve this wrapped up in a tortilla too for some extra oomph. 



If you are busy, I recommend cutting up a bunch of peppers and tomatoes or whatever you like in your eggs and storing them in small tupperware containers. That way you can just dump it in your eggs without having to do a lot of prep in the morning.
