Lemon Pepper Chicken PLT Wrap

Well I had no idea what to call this because its pretty simple so I settled on a name that would describe it all. Instead of being a "BLT" as in bacon lettuce and tomato, its a "PLT" as in portobello, lettuce and tomato. Because for some weird reason, portobello's sauteed in olive oil start to kind of taste like bacon. YES!

Ingredients:

1. pita bread
2. chicken breast
3. portobello mushroom
4. lettuce
5. tomato
6. mayo (optional)
7. lemon pepper

I cheated and used pre-cooked frozen chicken breasts, then put them in the microwave to thaw them out. I know. 


Scoop the gills out of the portobello. 


And slice it up. 


Toss them in a pan with some olive oil and lemon pepper and a little bit of salt. (Always salt.)


Next I put the chicken in and added lemon pepper to that too. Let the mushrooms shrink up a bit, and let the chicken heat up too. 


Take off the chicken and dice it up, or cut it into strips, whatever you fancy .



Put the chicken and mushroom into the pita....

y tomato! You can add mayo here too. 


This is a good quick lunch you can make--another use for those pre cooked chicken breasts I talked about in an earlier post. You can pre cook your own (they will taste way better) or use these--they are tyson pre cooked chicken breast fillets, in the frozen section.
