Chipotle Guacamole

Alright, so I've posted this recipe a million times on other social media but never a photo recipe. Here it is--beloved chipotle restaurant guacamole. I used to work there, this is legit.

There are a few rules. Most of my recipes can be modified with different ingredients, but not this one.
1. Do not add tomatoes to your guacamole. That is stupid and will ruin it. Tomatoes belong in the pico.
2. Do not add garlic to your guac. That is also stupid.
3. For the love of god, do not put the avocados in a blender. We are not making avocado soup.

Ok, ingredients: 

  1. 6 avacados (if you are using them right away, they should be brown and soft. that means ripe)
  2. 1 jalapeno (or more, depending on your spice tolerance)
  3. juice from 1 lime
  4. half a red onion, diced
  5. 1/2 cup cilantro
  6. 1 tbsp kosher salt


Cut them in half...


Take the pit out by sticking the blade of your knife in it and twisting. 


Scoop out the meat. 


Mash them up with a potato masher. There should still be chunks. 



Mince your jalapeno into 1cm by 1cm chunks. Cut the end off...


Cut it into 1/3rds...


Take a 1/3rd and slice it into match-stick width pieces. 


Turn them and mince away. 




Dice your onion. Cut it in half...



Cut the end off...


Make verticle cuts...


and dice! Add the onion and jalapeno to the mashed avocado. 


Cut your lime in half...



Stick a fork in it and squeeze. Then rotate the fork 90 degrees and squeeze again. Thats how you get the juice out without a lemon juicer. 


Add the salt to taste and serve with chips or on a burrito, tacos...you know the drill!
