Cooking for 2 [with a slow cooker]

Hello everyone!

So if you, like me, are cooking meals for yourself plus one other, you need some good recipes that will keep through the week OR be delicious enough for one night. I dont have photos for tonight, but this is a quick short post for those of you like me.

recipe 1: Mexican tortilla soup
1. turn your crockpot on high
2. add 1/2 can corn
3. add one small can diced green chiles
4. add one tomato. cut it up yourself. dont buy pre-cut tomatoes. they suck.
5. add 1 box of swansons chicken broth (or mexican tortilla broth if you can find it)
6. add 1 shallot or 1/8 of an onion. like minimal onion. onions freak me out so i dont use a lot of them.
7. add pre-cooked chicken breast if you have it. You can get a rotisserie chicken or pre cook your chicken (I usually pre cook a bunch at the beginning of the week)
8. add 1/2 can black beans, drained.
9. add cumin, salt, pepper, and chili powder.
10. Cook it on high for 2 hours and delight! I serve this with tortilla strips, sour cream, and cheese, but its delicious plain.
if you have cilantro and a lime, adding fresh chopped cilantro and lime juice will make this AMAZING. 
I also like to add a package of uncle bens 90 second microwaveable rice. if you microwave it first, add it towards the end of cooking otherwise it will be mushy. if you don't microwave it first, allow it ample time to cook in the crock pot. 

recipe 2: French Onion Chicken and Potatoes
1. turn your crockpot on high
2. put in 2-3 potaotes, cut into quarters.
3. put in 2 chicken breasts and cover them with salt and pepper.
4. dump in a packet of lipton french onion soup mix.
5. let it cook for about 2 hours, or until the chicken is no longer pink.
6. enjoy! this is a hearty meal. if you don't like onion soup mix, use rosemary and thyme instead.

recipe 3: Beef, chicken, or veggie chili
1. Brown some ground beef or cook and shred some chicken.
2. put it in your crock pot. if you browned beef, add a box or two of beef broth to the crock pot. if you did chicken, add chicken broth. if you wanna do veggie chili, use veggie broth.
3. chop up some bell peppers and put them in.
4. chop up a jalapeno and put it in. (this really won't make it very spicy, I promise)
5. chop up half an onion or some shallots and put them in.
6. put in a tbsp of worcestershire sauce and a tsp of your favorite hot sauce
7. add kidney beans or chili beans or navy beans or white beans--the canned kind that are already cooked. pick some beans, any beans!
8. add cumin, salt, pepper, a little bit of basil, cayenne pepper, and paprika.
9. let it cook on high for 2-3 hours so the flavors combine. enjoy!

these recipes all keep well in tupperware throughout the week!

recipe 4: easy lemon chicken
1. put some chicken breasts in your crock pot.
2. dump lemon pepper over them.
3. add a can of cream of chicken soup.
4. cook on high for 3 hours.
5. enjoy! if the sauce is too watery, add flour and wisk.

recipe 5: roasted veggies over rice
1. cut a sweet potato into quarters and put in the bottom of your (greased) crock pot.
2. cut up some carrots (or use baby carrots) and throw those in.
3. cut your favorite bell peppers into large chunks and put them on top of the potato/carrot
4. cut up a zucchini/yellow squash into large chunks and place that on top.
5. sprinkle with garlic powder (or use whole garlic if you have it!!)
6. drizzle olive oil over the top and add salt and pepper.
7. cook on high for 2-3 hours and serve over rice.

--THIS IS THE BEST RICE. Uncle ben's 90 second "ready" microwave rice--they have every single kind and it cooks fast and easy.

--They also sell this stuff called "rotel" which is canned tomatoes combined with green chiles. Its awesome for any tex mex style dishes.

Pro tip:
If you're gonna be gone 4-6 hours, put some whole potatoes in your crock pot, drizzle them with oil and kosher salt. cook on high for 4-6 hours.

Boom, baked potatoes. Serve with whatever you want.
