Huevos Rancheros [Vegetarian]

This is a great, filling breakfast that you can add meat to if you want, or leave it veggie!

You need:

  1. flour or corn tortillas
  2. two eggs
  3. pre cooked chicken or steak (if desired)
  4. garnishes: your favorite salsa and/or guacamole
  • For my salsa, I used diced tomato, bell pepper, onion, cilantro, and lime juice


I diced some tomatoes...


and added them to some bell peppers and onion, plus some chopped cilantro, and a little bit of lime juice!



Heat a tortilla over medium heat and crack two eggs on it



I covered the eggs with a pan because I wanted them to cook faster. When the whites are done, ...


Flip it over. Oops, burned that tortilla. whatever. 


Flip it back over on a plate


And garnish with salsa, guac, and chicken or steak if you prefer! You can serve it with hot sauce too.
