Easy Rosemary and Garlic Crockpot Chicken

Ingredients: 

1. boneless skinless chicken breasts (I only had one thawed out, but you can do 3-5 depending on your crockpot)
2. new potatoes, cut into quarters
3. 1-3 cups chicken broth (or water, or water with chicken stock cubes)
4. rosemary, thyme, garlic powder, onion powder (or whole garlic/onion)

This is a super simple recipe, just wanted to post it for some inspiration. If you are busy, you can put chicken and potatoes or chicken and rice in your crockpot with whatever seasonings/herbs you like! I am partial to the rosemary/garlic/shallot combo. 

1. put your chicken in the crock pot
2. place the potatoes on top of the chicken (otherwise they will get soggy if they sit in the broth)
3. put in some whole garlic cloves/shallot cloves, or garlic and onion powder
4. sprinkle on rosemary and thyme
5. cook on high until chicken is done. 

1 breast: about 2 hours on high, 4 hours on low
2 breasts: 3 hours on high, 6 hours on low
3 + breasts: 3-4 hours on high, 6-8 hours on low. 


This is awesome to do before work--set it to low and dinner is ready when you get home!
